biscotti bites!

I'm on a bit of a biscotti kick right now. I love, love, love those mini biscotti thingies from trader joes and I've made some myself. Though I will admit that the whole double baking thing can be somewhat annoying, especially if you're running short on time. Well lo and behold in this month's issue of martha stewart living they featured a recipe for what they called "biscotti bites." It's like biscotti but takes a lot less time and is made extra delicious after a dunk in some melted chocolate. As usual I didn't have all of the ingredients on hand but I made do and in the end they turned out fabulous and dare I say a bit healthier than the original recipe?!

1 1/4 c all-purpose flour
1 1/4 c fine cornmeal
1/2 tsp baking powder
1/2 tsp coarse salt
3/4 stick unsalted butter, room temperature
1 c granulated sugar
2 large eggs
1 c coconut flakes
2 tbsp finely grated grapefruit zest (I used clementines)
5 ounces bittersweet chocolate, finely chopped
sugar, for sprinkling

Whisk together flour, cornmeal, baking powder, and salt. Beat butter with a mixer on medium speed until smooth. Add granulated sugar and beat until pale and fluffy, about 3 minutes. Beat in eggs, 1 at a time, until well combined. Add flour mixture and beat on low speed until just combined. Then beat in coconut, grapefruit zest, and 2 ounces chocolate until evenly distributed.
Drop heaping teaspoonfuls of dough, spaced 1 inch apart, on parchment-lined baking sheets. Sprinkle tops with sugar. Refrigerate 30 minutes.
Preheat oven to 350 degrees. Bake, rotating sheets halfway through, until golden, 18 to 20 minutes. Let cool completely on baking sheets set on wire racks.
Melt remaining chocolate. Dip bottoms of cooled cookies in melted chocolate, scrape off excess against rim of bowl, and set on parchment-lined baking sheets (I popped the sheets with the parchment paper in the freezer for ten minutes so it made the chocolate set immediately, on contact). Refrigerate until chocolate is set, about 30 minutes.

These are fantastic with a nice, dark cup of earl gray tea since they're a bit on the sweet side. They smell incredible too thanks to the dash of citrus!
